Hi, How are you, folks? Today, we have uploaded a new video about an awesome curry on YouTube. I am sure that you would like it once you make it as shown in the video.
Most of my friends, as I have seen never try to make Ivy Guard at their home as the family members in their house, do not like it as most of them did not taste the type of curry I make or None of my friends has been making a curry like me.
So, Today I thought I should show not only my friends but all my beloved viewers how to make a tasty and marvelous Ivy Guard Curry / Scarlet Guard Curry / Kundru Curry or Kovakkai Curry as said in different languages.

Kovakai Curry (Kundru Curry/ Ivy Guard Curry/ Scarlet Guard Curry):
Ingredients:
For Masala Mixture:
Coriander powder: 3 Tsp.
Turmeric powder: 1 Tsp.
Chilli Powder: 3 Tsp.
Tamarind (Soaked): 30 gm
Cumin (sauteed): 1 Tsp.
Fenugreek (sauteed): 1 Tsp.
Fennel Seeds: 1 Tsp.
Sesame Seeds: 1 Tsp.
Poppy Seeds: 1 Tsp.
Tomatoes (Medium Sized): 2 No.
Oil: As Required,
For Curry:
Ivy Guard / Kovakai / Kundru / Scarlet Guard: 400 gms,
Mustard Seeds: 1 Tsp.
Oil: As Required.
Instructions:
For Masala Mix:
- Keep a pan on the stove.
- Add Little Oil and Saute Chopped Onions, Cumin Seeds, Fenugreek seeds, Fennel seeds, Sesame seeds, Poppy seeds, Grated Coconut (1/2 cup or 120 mL cup) and Tomato Separately.
- Pour it to the Mixie Jar, Then add Chilli powder, Coriander powder, Turmeric powder, Soaked Tamarind (in water) and Garlic into it.
- Grind it well into a fine paste by adding required water to it.
For Curry:
- Clean and Wash Ivy Guard/ Scarlet guard, then slice it in a four-way split shown in the video.
- Keep a cooker on the stove. Add Oil and Heat it.
- Add Mustard Seeds, Let it pop. Add the split Scarlet Guard/ Ivy Guard and cook it for 3 - 4 minutes.
- Now, Add the grounded Masala Mix into the cooker and mix them well and allow it to cook for 5 minutes.
- Add the water to get the required consistency.
- Close the Cooker Lid and cook for 10 minutes.
- After that, Open the Lid.
- Boil the Curry for 3 - 4 minutes. Meanwhile Mix it well.
- Transfer it to the Serving Bowl.
- Garnish it with Coriander Leaves.
NOTE: You can use it with Boiled Rice, Indian Bread (Chappathi) etc...
Serving: 4 Adults.
And the tasty Ivy Guard Curry is ready.
